VARIETY: Chardonnay 70% and Pinot Noir 30%

Process:
BASE WINE: preparation of the base wine, from carefully selected grapes, from own vineyards, cultivated in backrest, with a production of 1.5 kg per plant. The vineyards are located at an altitude of 1000 metres above sea level.
PREPARATION: Refermentation in autoclaves with controlled temperature in 12 o C. Maturation occurred in the permanence of the sparkling wine for 6 months on the yeasts which gave it creaminess and finesse.
VISUAL: Straw yellow, bright
PERLAGE: Thin, abundant and very persistent.
OLFATO: Fine and delicate aroma with notes of pineapple, apple, apricot, bread peel and yeast.
MOUTH: Great acidity, balanced, good creaminess, persistent and with nice and fruity retro-smell.
HARMONIZATION: Japanese and Oriental cuisine, white and red meats, feijoada, barbecue, appetizers, fish, crustaceans, pasta, risottos, light cheeses and pizzas.
