PRODUCTION: Preparation of sparkling wine, from carefully selected grapes, from own vineyards, cultivated in backrest, with a production of 2.2 kg per plant. The vineyards are located at an altitude 1000 meters above sea level.
PREPARATION: Fermentation in autoclaves with controlled temperature at 12 o C.
VISUAL: light straw yellow with greenish reflections.
PERLAGE: thin, abundant and persistent, forms a foam crown in the bowl.
SMELL: Fine, complex, delicate and intense aroma with notes of fruits such as peach, apricot and florals such as orange blossom,
MOUTH: great acidity, balance between sweetness and acidity, good creaminess, very persistent and with nice retro-smell and very fruity.
HARMONIZATION: Desserts based on fruits, dried fruits, raisins, fruit ice creams, fruit salad, sweets in general and gorgonzola and roqueforte cheese.
