After filtering, beer wort is boiled along with hops (and if used, there are other flavoring agents) in large jars called brewing pots. The boiling process is where chemical and technical reactions take place, including sterilization of wort to remove unwanted bacteria, release of hop flavor, bitterness and aroma compounds through isomerization, cessation of enzymatic processes, protein precipitation and wort concentration.
