The chemical name of potassium sorbate is "potassium 2,4-ethylenediene", and its form is white to light yellow crystal particles or flake crystals or powders, slightly odorous or odorless, soluble in water, 1% aqueous solution pH value is 7~8, also soluble in ethanol, etc. It is flammable and hygroscopic, and when placed in the air for a long time, it is easy to be oxidized and discolored. As a food preservative, potassium sorbate can inhibit the activity of dehydrogenase in microbial cells (especially mold cells), resulting in the destruction of a variety of important enzyme systems, effectively inhibiting the growth and reproduction of harmful microorganisms, so as to achieve the purpose of antibacterial and antiseptic.
Potassium sorbate is ingested by the body as an unsaturated fatty acid salt, and is eventually oxidized to carbon dioxide and water. Its decomposition temperature is as high as 270 °C, the thermal stability is relatively good, the toxicity is only 1/40 of sodium benzoate, but the antibacterial and antiseptic effect is 5~10 times that of sodium benzoate, and the original nutrients and color, aroma and taste of food can be maintained in the preservative process.
