It is an emulsifier, suspending agent, thickener, stabilizer, gelling agent in food, such as jelly, sugar, beverages, dairy products, jam products, bread fillers, surface lubricants, candies, frostings and seasonings. Gellan gum has good gelling properties and has gradually replaced the use of agar and carrageenan.
