Sunflower oil is pressed from the seeds of the sunflower plant (Helianthus annuus). It contains high amounts of the essential fatty acid, linoleic acid. Some sunflowers are grown to contain high amounts of oleic acid. Sunflower oil that comes from these plants is called high-oleic acid sunflower oil.

The refined oil is pale yellow, clear, bright and almost odourless. In the refined variety, oleic / linoleic acid is 1 to 2 (30% vs. 65% approximately). In the high oleic variety, oleic content is above 75% at the expense of linoleic acid (about 10%).
