The Açaí powder dehydrated is obtained from selected fruits, where they are submitted to a treatment of sterilization and separation of the pulp, maintaining the nutritional and functional characteristics of the fruit. Maltodextrin is added to the dehydration process to extract the pulp from powder. Lyophilized Acai powder is obtained through lyophilization, which is the most modern method of removing water from food, initially freezes the product and then sublimates it maintaining the nutritional and functional values of the fruit.
